Licking the Bowl

The gelfling baked a Christmas cake today. I got to lick the bowl. Here’s her recipe . . .

THE GELFLING’S CHRISTMAS CAKE

• Measure into large pan:
◦ 1 cup brown sugar
◦ 1 cup cold water
◦ 125 gm butter
◦ 1 tbsp golden syrup
◦ 1/2 tsp nutmeg
◦ 1/2 tsp all spice
◦ 1 tsp mixed spice
◦ 1 tsp baking soda
◦ 1 kg mixed fruit

• Bring to boil and simmer 10 minutes with lid off. Then cool.
When cold, add:
◦ 2 eggs, one at a time
◦ 2 cups flour
◦ 1 tsp baking powder
◦ 1/3 cup brandy

• Bake at 150° (300°F) for 3 hours in a papered, covered tin.
Pour over more brandy while still hot. Cool in pan overnight.
